The Recipe
Ingredients
Peach filling:
5-6 fresh yellow peaches, thinly sliced and pitted
1/2 cup cane sugar
1/4 cup cornstarch
1/2 lemon, juiced
2 tsp cinnamon
Oat topping:
1 1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup almond flour
1 tsp vanilla extract
5 tbsp butter, cubed and near room temperature but cold
Instructions
1) Preheat oven to 350F.
2) Prepare the peach filling: In a large 8x8 or similar size baking dish, gently mix together sliced peaches, cane sugar, cornstarch, lemon juice and cinnamon. Mix until peaches are evenly coated.
3) Create the oat topping: In a separate bowl, combine rolled oats, brown sugar, almond flour and vanilla extract. Stir with a spoon. Add in cubed butter and use your hands or pastry blender to help incorporate butter into oat and sugar mixture.
4) Create peach heaven: Gently spoon oat and sugar mixture over top of prepared peach filling. Place in preheated oven and baked for 25-30 minutes.
5) Serve and enjoy! This dish is classically and deliciously served with vanilla bean ice cream.
