Oven Baked Lemon Salmon and Asparagus

The Recipe

Ingredients

2-3 salmon filets

1 tsp paprika

1 tsp coriander powder

2 tsp garlic powder

salt & pepper

2 tbsp fresh flat leaf parsley, finely chopped

1 bunch of asparagus, woody stalk removed

olive oil

2-3 lemons


Instructions

1) Preheat oven broiler (550F) and arrange baking shelf to be about 8-10 inches from broiler.

2) Prepare the salmon: Pat salmon dry with paper towel and remove any visible bones. Carefully sprinkle paprika, coriander, garlic powder, salt and pepper over top. Sprinkle over parsley. Place the salmon in the middle of a baking sheet.

Tip: Cover sheet with parchment paper for an easier clean-up

3) Add asparagus: Align asparagus next to the prepared salmon and drizzle with olive oil. Sprinkle with a bit of salt and pepper and carefully roll asparagus to fully get coated in olive oil.

4) Lemon time! It's time to squeeze lemon all over the pan. Douse your salmon and asparagus in a healthy dose of lemon juice. Cut a lemon in small rounds and garnish the salmon before putting the baking sheet in the oven.

5) Broil the goods: Broil the salmon and asparagus for 8-10 minutes or until the salmon is fully cooked (easily flakes away with fork and there is not raw pink color).

6) Serve and enjoy! This meal can be eaten as is or you can serve up some simple white or wild rice to enjoy it with!
