Middle Eastern-style Chicken Kebabs

The Recipe

Ingredients

1 cup plain whole milk greek yogurt

5 garlic cloves, finely minced

zest of one lemon

1/2 lemon, juiced

2 tbsp olive oil

2 tsp paprika

1 tsp cumin

1/4 tsp cinnamon

1 tsp crushed red pepper flakes

salt & pepper

2-3 pounds boneless, skinless chicken thighs, cut into 1.5 inch pieces

1 large red onion, cut into 1 inch pieces

vegetable oil to grease the grill


Instructions

1) Prepare the marinade: In a large bowl combine the greek yogurt, minced garlic, lemon zest, lemon juice, olive oil, paprika, cumin, cinnamon, red pepper flakes, salt and pepper. Stir to evenly blend the ingredients together.

2) Marinade the chicken: Toss the chicken chunks in the yogurt marinade and allow to rest in the fridge for 4-8 hours or overnight for best results.

3) Time to assemble the kebabs: Remove a piece of chicken from the marinade, shaking off any excess marinade and thread onto your metal skewer*. Place a piece of onion after every 2 or 3 pieces of chicken.

4) It's time to grill: Preheat the grill to medium-high heat. Carefully and gently grease the grill with vegetable oil and a paper towel to help prevent the kebabs from sticking. Grill the kebabs until golden brown and fully cooked. This could take between 13 and 15 minutes.

Note: The yogurt marinade is prone to sticking and burning. Don't fret!

5) Enjoy! Remove the chicken kebabs from the grill and serve with your favorite sides.


*If you are using wooden skewers make sure to pre-soak to prevent burning on the grill.
