Mashed Sweet Potatoes

The Recipe

Ingredients

4 lbs sweet potatoes, 2" chunks

1/3 cup butter

1/3 c. heavy cream, room temperature

1 tsp garlic powder

1/4 tsp cinnamon

salt & pepper

optional: 2 tbsp brown sugar for additional sweetness.


Instructions

1) Boil the potatoes: In a large pot, bring salted water to a boil. Add in potatoes and boil for 15-20 minutes. Potatoes are done when they can easily be pierced with a fork.

2) Prepare for mashing: Drain the potatoes in a strainer and set aside to allow all the excess water to evaporate. Add potatoes back into pot, toss in butter and begin mashing. Slowly pour in cream, a little at a time, until you reach desired consistency.

Hint: You may not need all the cream.

3) Season the taters: Mix in garlic powder, cinnamon, salt, pepper, and brown sugar. 4) Serve and enjoy!
