The Recipe
Ingredients
1 cup fine bulgur
1 large garlic clove, minced
2 bunches of curly parsley, finely chopped
12 large mint leaves, finely chopped
1/2 english cucumber, diced
3 medium tomatoes, diced
2 lemons, juiced
1/2 cup olive oil
salt & pepper
Instructions
1) Prepare the bulgur: In a large bowl, cover the bulgur in an inch of just-boiled water. Allow to sit for 20 minutes and it will double in size.
Tip: Add a squeeze of lemon juice for extra flavor.
2) Time to chop up the fresh ingredients: While the bulgur is bulguring, this is the perfect time to prepare all your fresh ingredients. Dice the tomatoes and cucumber into bite-sized pieces. Finely chop your fresh herbs. Juice your lemons. Mince your garlic.
3) Combine everything: Once 20 minutes has passed, drain any excess water from the bulgur and toss in your prepared fresh ingredients: garlic, parsley, mint, cucumber and tomatoes. Drizzle in the lemon juice and olive oil. Add salt and pepper to your liking.
4) Enjoy! This is a tasty side dish that can be enjoyed simply with pita bread or our chicken kebabs.
